INGREDIENTS
500 g peppers after hollowing out - I used 2 large peppers
1 tbsp of clarified butter
1 onion, chopped
3 garlic cloves, chopped
200 g mushrooms, chopped
1 carrot, grated
1 can of chopped tomatoes or tomato puree
400 g minced beef
salt and pepper to taste
sweet pepper, smoked pepper, chilli
optional other spices
1. Heat oven to 200'C.
2. Heat the ghee in a large pan.
3. Add the onion, garlic, mushrooms, carrot and cook for a few mins to soften.
4. Add cooked beef.
5. Add the can of tomatoes.
6. Season well, give everything a good stir and cover with a lid. Simmer for 30 mins.
7.When the mince is cooked, divide it between the peppers.
8. Place in the oven for around 30 minutes.
