A bowl of thick creamy tomato soup perfectly suits the chilly winter days.
Ingredients
1 large onion, chopped
6 garlic cloves, chopped
1 cup meat stock
1 tin of tomatoes
butter or ghee to fry onion & garlic
1 tbsp apple cider vinegar
herbs&spices of your choice: basil, thyme, marjoram, smoked paprika...
1. Melt the butter and sauté onion and garlic for 5 minutes.
2. Add tomatoes, vinegar and meat stock.
3. Add herbs and spices and simmer for 15 minutes.
4. Puree with a hand blender and garnish with olive oiled, raw sour cream and some chopped parsley.
