Cookies

On the GAPS Diet we use a lot of egg yolks. These cookies are a great way to use up leftover egg whites :-)




Ingredients

  • 1 cup shredded coconut

  • 2 egg whites

  • 1 teaspoon vanilla extract

  • 1-2 teaspoons raw honey



  1. Preheat the oven to 170'C.

  2. Mix all ingredients together in a bowl with a spoon.

  3. Line a cookie sheet with parchment paper.

  4. Drop spoonfuls of the coconut mixture onto the cookie sheet.

  5. Bake tor around 20 minutes until golden brown.
