On the GAPS Diet we use a lot of egg yolks. These cookies are a great way to use up leftover egg whites :-)
Ingredients
1 cup shredded coconut
2 egg whites
1 teaspoon vanilla extract
1-2 teaspoons raw honey
Preheat the oven to 170'C.
Mix all ingredients together in a bowl with a spoon.
Line a cookie sheet with parchment paper.
Drop spoonfuls of the coconut mixture onto the cookie sheet.
Bake tor around 20 minutes until golden brown.
