Braised cabbage with bacon

Did you know, that consumption of the cabbage can increase the number of beneficial bacteria in your gut. This is because fiber is the main fuel source for friendly species like Bifidobacteria and Lactobacilli. These bacteria perform important functions like protecting the immune system and producing critical nutrients like vitamins K2 and B12.


Ingredients

1 cabbage, shredded

2 small onion – finely chopped

1 carrot, chopped

2 tablespoons of ghee

1 tablespoon of caraway seeds

250ml of meatstock stock

200g bacon, cut in small squares

100ml sour cream

Salt and pepper to taste


Method

  1. Use a deep frying pan – with a lid and fry bacon and onions.

  2. Add the cabbage and stir.

  3. Cook for a few minutes.

  4. Add the caraway seeds and the stock.

  5. Stir and bring to a gently simmer.

  6. Put on the lid (a glass one is good) and simmer until the cabbage is soft.

  7. Check the progress and stir a few times to make sure the liquid does not dry out.

  8. Adjust the seasoning and serve with raw sour cream.
