Aubergine Dip


· 1 aubergine

· 2 tomatoes

· 3-4 garlic cloves

· 5 tbsp. olive oil

· 2 raw egg yolks

· Animal fat for baking aubergine

· Fresh herbs; dill, parsley…









1. Cut the aubergine into pieces.

2. Place on a baking tray and add fat.

3. Bake for 30 minutes at 160’C.

4. Let it cool down.

5. In the blender, blend together all ingredients.

6. Serve with fish, meat and vegetables.
