Raw Cabbage Salad - Polish Surówka
Surówka is a traditional salad from Poland consisting of fresh fruit and vegetables and it is often dressed with olive oil, salt, pepper, lemon juice, creamy dressing consisting of sour cream, yogurt, and mayonnaise.
It is most commonly prepared with coarsely grated carrots, apples, onions, white/red cabbage, and sauerkraut, although an array of other ingredients may be included depending on the season. Some varieties are garnished with chopped parsley or dill before serving, while modern renditions include various spices such as cinnamon and caraway seeds, and are often enhanced with citrus fruits, dried fruits, and nuts.
Surówka (raw salad) can be consumed on its own or served as a side dish accompanying different hearty dishes. When translated, the name surówka means raw, referring to the fact that it is prepared with raw ingredients.
1/2 head white/red cabbage, grated
1 leek - white part only, cut into slices
1 radish bundles, cut into slices
dill/parsley, to decorate
1/2 cup sour cream/yoghurt/mayonnaise
1 tbsp. honey
a pinch of salt, pepper and cayenne pepper
Mix all ingredients for dressing together.
Add it all to raw veggies.
Mix it all together in a large salad bowl.
Chill in the refrigerator before serving.
Decorate with chopped dill or parsley.
